Wertvoller Akazienfaser-Ballaststoff

Gummar ist ein kaltlöslicher, prebiotischer Ballaststoff aus dem Baumharz einer Akazienart, meist Acacia senegal, mit einem großen Wasserbindevermögen.

Gummi arabicum ist geschmacksneutral und lässt sich gut in Flüssigkeiten, Müsli oder Joghurts einrühren. Durch den langsamen Abbau der Moleküle im Darm wird die Blähwirkung stark reduziert. Daher ist Gummar auch für empfindliche Personen geeignet. Bei selbstgebackenen Broten oder Gebäck kann er bis zu 10% des Mehles ersetzen. Setzt man bei der Herstellung von Gebäck eine kleine Menge Gummar hinzu, sorgt er für Elastizität.
